A 27-year-old Woodville Gardens man was charged with attempted murder and several other offences over the alleged incident.
South Australia Police confirmed on Saturday that the 39-year-old officer was recovering well.
“Jessie is recovering well and will continue to receive our full support during her recovery,” police said in a statement.
“We thank all the medical staff from SA Ambulance and the Royal Adelaide Hospital involved in Jessie’s care and acknowledge the many messages of support received from her policing colleagues and the community.”
Police Commissioner Grant Stevens described Jessie as “incredibly lucky”, saying the attack had shaken South Australia’s policing community.
Police confirmed the officer will not comment on the incident while she focuses on her recovery.
